American celebrity chef Richard Sandoval is the inspiration behind the restaurant, which will combine authentic flavours with New York creativity. Sandoval will oversee the development of the restaurant as well as guide the menu creation, to ensure it reflects the Maya brand, which has already received rave reviews in Los Angeles and New York.
Sandoval said: “Maya captures the spice and sizzle of Latino cuisine. There’s nothing hotter than frosty margaritas, sand between your toes and fajitas on the beach, but we will still be keeping the style of a five-star environment.”
Sandoval redefined the concept of Mexican food in America by putting it on a par with more traditional fine-dining experiences, such as Italian and French cuisine.
Pam Wilby, general manager of Le Royal Meridien, believes Dubai is ready for the Maya concept. She said:
“Dubai is now a sophisticated gastronomic market, and we are excited about challenging traditional beliefs of what makes high-class cuisine. Maya will show the city that Mexican food is more than nachos.”
Mexico City-born Sandoval and his team serve up authentic Mexican food with a contemporary interpretation in the presentation and ingredients as well as a full cocktail menu including mojitos and margaritas with a Maya twist.
Set in along the landscaped beachfront at Le Royal Meridien, Maya was created as part of an extensive development project at the property – including an extensive garden refurbishment and a new infinity pool – which is part of an ongoing programme to meet and exceed guest expectations.
